Thaumatococcus daniellii is a plant species from Africa, native to the rain forest of Western Africa, known for being the natural source of thaumatin, an intensely sweet protein that is of interest in the development of sweeteners. Moin moin or moi-moi is a steamed or boiled bean pudding made from a mixture of washed and peeled beans and onions, fresh red peppers, spices, and often fish, eggs, and/or crayfish. It is a protein-rich Yoruba food that is commonly eaten across West Africa.

This series of pictures shows the Moi Moi leaf harvesting process preparing for new leaf to germinate before it gets to the retailer in the market and the consumer comes for it to prepare moi moi itself at home. To Yoruba’s understanding, this leaf adds more vitamins to moi moi. But seriously, there is a huge difference and it tastes better rather than with nylons and tin cans or cups.

Researchers revealed that the leaf used in. wrapping Moi-Moi, a popular food in Nigeria made. from beans protects against diabetes, contains. components that cure liver and kidney diseases.
